Fransa'da 17. yüzyıldan beri damıtılmaktadır. "Yanık şarap" anlamına gelen "Brandejvin" kelimesinden türemiş brandy'nin Fransa'nın belli bir yöresinde yapılanıdır. Bu farklılık "Her konyak bir brandy'dir, ama her brandy bir konyak değildir" şeklinde özetlenmiştir.

hollanda'da brandewijn yakılmış şarap anlamına geliyor. Brandy şarabın damıtılmasıyla elde edilen yüksek alkollü bir içki. 16. yüzyılda fransa'nın cognac kasabasından aldıkları şarapları bozulmaması için damıtmayı deneyen hollanda'lı ve norveç'li tüccarlar tarafından keşfediliyor. iki kez damıtma uygulanıyor ve özel meşe fıçılarda bekletiliyor. tadını, rengini bekletildiği meşe fıçılardan alıyor. en az 4-5 yıl meşe fıçılarda dinlendiriliyor. brandy bakırdan yapılan imbiklerle iki kez çekiliyor. damıtma ve dinlenme işleminden sonra diğer bölgelerden gelen brandylerle karıştırılıyor. bazen genç brandylerde karamel ilavesi olabiliyor renk vermek adına. üzüm dışındaki meyvelerden de yapılmasına rağmen hepsinin özel isimleri var. brandy denince akla gelmesi gereken meyve üzüm. dünyada en çok bilinen ve tüketilen brandy konyaktır.
